Happy Chocolate Cake Day!

May your day be filled with delicious chocolatey goodness!

To celebrate, how about trying this delicious recipe for chocolate cupcakes from the Hummingbird Bakery, they are moist and rich and totally delicious, perfect for marking this wonderful day.



100g plain flour

2 ½ tablespoons cocoa powder

140g caster sugar

1 ½ teaspoons baking powder

A pinch of salt

40g unsalted butter at room temperature

120ml whole milk

1 egg

¼ teaspoon vanilla extract

A 12-cup cupcake pan lined with paper cases


300g sifted icing sugar

100g unsalted butter at room temperature

40g cocoa powder

3 tablespoons whole milk

  1. Preheat the oven to 170◦C (325◦F) Gas 3)
    Combine the flour, cocoa, sugar, baking powder, salt and butter and mix with electric mixer on a slow speed until everything is combined and the consistency is sandy.
  2. Whisk the milk, egg and vanilla extract together in a bowl and, then slowly pour half into the flour mixture, best to combine and turn the mixer up to a high speed to get rid of any lumps.
  3. Turn the mixer down low and slowly add the rest of the milk bit by bit, continue mixing for a couple more minutes on a slow speed until the mixture is smooth.
  4. Spoon the mixture into the paper cases until two-thirds full and bake in the preheated over for 20-25 minutes or until the cake bounces back when touched and a skewer inserted into the middle of a cupcake comes out clean. When they have cooled slightly put the cupcakes in their cases onto a wire rack to finish cooling completely.
  5. While the cakes continue to cool you can make your icing. Beat the icing sugar, butter and cocoa with an electric mixer on a medium-slow speed until the mixture comes together and is well mixed.
  6. Turn the mixer down to a slow speed and add the milk to the butter mixture a little at a time. Once all the milk has been incorporated, turn the mixer up to a high speed and beat until the mixture is light and fluffy and then for 5 minutes after that. The longer the frosting is beaten the fluffier and lighter it becomes.
  7. Once the cakes are completely cool spoon the mixture on to the top of the cupcakes and voila!
