I have been desperate to make courgette/zucchini pasta for aaagggeessss so when the Cucumbo hit The Great Gift Company shelves I couldn’t wait to try it.

I decided to go simple for my first go with the Cucumbo, what better than “pasta” and pesto; a healthier remake of my staple student diet.

Ingredients: Basil, Olive Oil, Salt Pepper, Garlic, Courgette and Cucumbo!

I simply twisted the courgette through the Cucumbo and got a wonderfully satisfying long curl of courgette that just seemed to go on and on. I then made this into lots of shorter curls and put them in a pan of hot water to boil.

In the meantime I put the rest of the ingredients in a food processor and wizzed, yummy vibrant green pesto!

I didn’t cook my “pasta” for too long as I wanted it to be quite firm, then I drained it and coated it in my pesto and chucked in some chopped up tomato for a bit of colour and sweetness.

The results were yummy and the courgette stayed in curls even through cooking. I am definitely going to use the Cucumbo for a pickled cucumber experiment next, its such a fun thing to use and add a bit of excitement to an otherwise fairly boring meal.
